Korean Style Cucumber Salad

I was looking for something to go with a steak dish I was trying, called Japanese Steak Rice Bowl. (Japanese Style Steak Rice Bowl https://cookpad.wasmer.app/us/recipes/4643016-japanese-style-steak-rice-bowl ) This Korean cucumber salad looked like it might fit the bill. It was perfect, really added a nice offset to the slightly sweet sauce on the steak. Now to be fair, I'm not a huge fan of cucumbers, it's a take or leave it kind of thing. But I tell you what, this thinly sliced English cucumber, in this light pickle was perfection. I used a medium hot red pepper powder, and it was not spicy. The flavors were fresh and just happen to be perfect with the steak. Without the lime juice, it had a very slight acidic taste, if you want it a tad more, use the lime/lemon juice also.

Ingredients

10 minutes
4 as a side
  1. 1cucumber, mild like English
  2. 1carrot
  3. 3green onions (scallions)
  4. 1/8 cuprice wine vinegar
  5. 1/8 cupwater
  6. 1/2Tbl. Salt
  7. 1/2Tbl. Sugar
  8. 1 tsp.Red pepper powder (optional)
  9. 1 Tbs.Lime/Lemon juice (optional)

Steps

10 minutes
  1. 1

    Thinly slice carrot and cucumber, put in a bowl. I used a mandolin and sliced them about 1/16 inch thick, which was perfect in my opinion.

    Chop your green onions, add to bowl

    Added vinegar and water to bowl

    Add rest of the ingredients

    Mix well. I put it in a plastic container and refrigerate about an hour or two before dinner

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
