
Roasted vegetable & feta cheese wraps

Preheat the oven to 425°F. Mix together all the vegetables, olive oil, garlic, and salt and pepper and place in the oven in a non stick baking sheet. Roast for 15-20 minutes, or until golden and cooked all the way through.

Remove from the oven, let cool, then mix in the feta and mint.

Preheat a nonstick pan or broiler pan until almost smoking, then cook the wraps one at a time on both sides for 10 seconds. This will add some color and also soften the wraps.

Divide the vegetable-and-feta mixture among the wrap, cut them in half, and serve immediately.
