Ingredients

  1. 1red onion, cut into eighths
  2. 1red bell pepper, cut into eighths
  3. 1eggplant, cut into eighths
  4. 1zucchini, cut into eighths
  5. 1/4 cupolive oil, extra virgin
  6. 2/3 cupfeta cheese, crumbled
  7. 1 bunchmint, small shredded
  8. 4sun-dried tomato wraps, 10 inches in diameter
  9. salt
  10. pepper
  11. 1 clovegarlic clove, crushed

    Preheat the oven to 425°F. Mix together all the vegetables, olive oil, garlic, and salt and pepper and place in the oven in a non stick baking sheet. Roast for 15-20 minutes, or until golden and cooked all the way through.

    Remove from the oven, let cool, then mix in the feta and mint.

  3. 3

    Preheat a nonstick pan or broiler pan until almost smoking, then cook the wraps one at a time on both sides for 10 seconds. This will add some color and also soften the wraps.

    Divide the vegetable-and-feta mixture among the wrap, cut them in half, and serve immediately.
