Dough Preperation:
In a bowl, mix flour, beaten egg and salt

Knead a few minutes to obtain a fine dough, wrap in aluminium foil and refrigerate 2 hours

Roll out as thin as possible, about
1/16", cut into 4 inch squares. - 4
Yields about 20 pieces

Egg Rolls Filling:
Combine vegetables in a deep bowl with salt and let stand 15 minutes.

Drain

Add other ingredients. Mix well

Note: You can add any meat, shrimp, lobster or leftovers to replace chicken. I have done half chicken and half left over turkey. I have also added shrimp or lobster to it which makes it very delicious!!
