Ingredients

1Container Cherry Tomatoes, cut in half
1 cartonfresh mozzarella cheese pearls, drained
1Avocado
1/3 cupBasil, julienned
2 tbspFresh parsley
1/4 cupLemon juice
1/4 cupOlive oil
1Salt & Pepper

Steps

Combine tomatoes, mozzarella, basil & parsley. Set aside.

In small bowl, whisk lemon juice, oil, salt & pepper. Pour over tomato mixture. Toss to coat.

Cover & Refrigerate for 1 hour.

Add in avocado just before serving.
