
Waffles with Powdered Sugar

beat butter together with sugar, 1 pinch salt, lemon zest, and vanilla extract until fluffy. Beat in eggs one at a time.

Combine flour and baking powder, sift into butter sugar mixture and stir. Cover batter and let stand for ten minutes at room temperature.

Preheat waffle iron, and grease cooking surface lightly. Spoon 3 tablespoons batter onto the center of the waffle iron and close. Bake each waffle for about three minutes until golden brown. Transfer to a wire rack and repeat process until all the batter is gone.

Dust warm waffles with the powdered sugar and serve.

if you don't like your waffles quite so crispy, stir in half a cup heavy cream into the batter after letting it rest
