Ingredients

2 servings
  • 2Chicken breasts, sliced
  • 1 canCoconut milk
  • 2 cupCooked rice
  • 1Red bell pepper, sliced
  • 1/2Yellow onion, sliced
  • 1 tbspMinced garlic
  • 2 tbspCurry powder
  • 2 tbspButter
  • 2 tbspOlive oil
  • 1 tbspChopped green onion

Steps

  1. 1

    Cook rice according to package

  2. 2

    Melt butter in saucepan. Add curry powder and coconut milk and mix together.

  3. 3

    Sauté bell pepper, onion, chicken and garlic in olive oil until cooked through.

  4. 4

    Scoop rice into plate and add chicken and veggie mixture. Top with curry sauce and serve.
