Slow Cooker-Style Cochinita Pork

This is my recipe for making delicious cochinita-style pork in a slow cooker. I highly recommend having a slow cooker at home. I don't have a photo of the final presentation because I made it for a fair, and it was meant to go on top of nachos with cheese and beans.

This is my recipe for making delicious cochinita-style pork in a slow cooker. I highly recommend having a slow cooker at home. I don't have a photo of the final presentation because I made it for a fair, and it was meant to go on top of nachos with cheese and beans.

After juicing the oranges, blend the achiote paste, garlic, onion, spices, salt, and guajillo chiles (except the bay leaves) until smooth. Note: I didn't get to include the achiote or bay leaves in the photo.

Once blended, marinate the pork with this mixture. I marinated it overnight.

Place the pork and marinade in the slow cooker and cook for 5 hours. Shred the meat with a potato masher, add the bay leaves, and cook for another 40 minutes. Done!

I use this meat for sandwiches—it’s delicious and very versatile. You can also use it for tacos, tostadas, or gorditas.

You can also cook it on the stovetop over very low heat!
