In a large saute pan over medium heat, saute your onion (chopped medium fine) being sure to stir constantly since you're not using a fat until translucent and fragrant.

Preheat oven to 350.

Finely chop your garlic and add to onions. Feel free to add more or less according to your taste. Keep stirring till fragrant, just a couple minutes.

Turn the heat up to medium high and add your corned beef and soy sauce, using a spoon or fork to shred it up. Continue until some parts are caramelized but not burnt, about 5-10 minutes.

Add a can of coconut milk and bring to a low simmer. Meanwhile, line a casserole baking dish with foil and give a quick spay with non-stick spray.

Line the foil with half of your spinach. Spoon in all of your corned beef mix, and top evenly with the rest of your spinach.

Pour the rest of your coconut milk over the top of the spinach evenly. At this point, I add salt and pepper on top, but corned beef is salty anyway so this is optional.

Cover tightly with more foil and bake about 45 minutes. Serve with rice or chop suey and enjoy!
