pre heat oven to 180°c

place potaotes in oven until crispy on outside and soft inside. if you want them done quickly then place in mircowave first for around 8 mins

once potatoes are cooked leave to cool for 10 mins

once cooled scoop out the potato from the skin keeping the skins in good form
- 5
cook the bacon and add to the potato mix along with the cream cheese and mix together
- 6
add the potato mixture back into the skins and then grate the cheese and sprinkle on top of the skins
- 7
cook until cheese as melted and slighly brown and serve
