Italian Wedding Soup

Ingredients

  1. Meatballs:
  2. 1/2 poundground veal
  3. 1/4 cuppanko bread crumbs
  4. 2 Tbspparmesan cheese
  5. 1 clovegarlic minced
  6. 2 Tbspmilk
  7. 1egg beaten
  8. 1 tspsalt
  9. 1/2 tspground pepper
  10. 1 1/2 tspItalian seasoning
  11. Soup:
  12. 2 Tbspolive oil
  13. 1 cupsweet onion finely chopped
  14. 1 cupcarrots finely chopped
  15. 1 cupcelery finely chopped
  16. 2 cartonschicken stock (about 8 cups)
  17. 1 tsporegano
  18. 1/2 tspground black pepper
  19. 1/2 cupancini de pepe (small pasta)
  20. 2 cupsbaby spinach
  21. 1/4 cupparmesan cheese

Cooking Instructions

    Preheat oven to 350 degrees. Mix all ingredients for the meatballs together and shape into small meatballs. Place on a pan lined with parchment paper and bake for approximately 20 minutes or until cooked through.

    Heat olive oil in a large saucepan and saute the onion. Add the next five ingredients for the soup and bring to a boil. Reduce heat and simmer for about 10 minutes. Add the ancini de pepe and simmer for another 6 minutes or until pasta is tender. Add meatballs, spinach and parmesan cheese and cook for 2 more minutes.
