Ingredients

  1. Meatballs
  2. 1 lb.Chopped Chicken
  3. 1/2 cupbreadcrumbs
  4. 1egg
  5. 1/3 cupgrated Parmesan cheese
  6. 3 clovesgarlic chopped
  7. 1 tspItalian Seasoning
  8. Salt and pepper to taste
  9. Soup
  10. 4 cupsChicken Broth
  11. 4 cupswater
  12. 3chicken bouillon cubes
  13. 2carrots chopped
  14. 2celery stalks chopped
  15. 1/2onion chopped
  16. 2 cupsspinach
  17. 1 cupuncooked Acini de Pepe (tiny pasta)
  18. Salt/pepper to taste
  19. Extra virgin olive oil

Cooking Instructions

    Mix all ingredients for meatballs together in a bowl. Take 1 teaspoon of meat at a time and roll into a ball. Place on platter.

    Begin with 2 tbl is EVOO in the bottom of a soup pot. Add carrots, celery, and onions. Sauté for five minutes.

    Add in 4 cups of chicken broth, and 4 cups of water +3 bouillon cubes. Bring to a slow boil and then lower flame to medium and add in meatballs. Cook for 20 minutes.

    In a separate pot, cook one cup of pasta in 5 cups of water set to the side

    After 15 minutes, add in spinach and simmer soup for another 10 minutes add salt and pepper if needed.

    Add a couple of tablespoons of pasta to the bottom of a soup dish, ladle soup on top of the pasta sprinkle with Parmesan cheese and enjoy
