Ingredients

  1. 1 lbGround Turkey
  2. 1 cupshredded carrots
  3. 1 cupcelery
  4. 1 mediumonion diced
  5. 2 clovegarlic peeled &smashed
  6. 1 packagesfresh baby spinach
  7. 1 packagesLip ton Onion Soup Mix
  8. 1 quartlow sodium chicken broth
  9. 3 tbspItalian Seasoning
  10. 1 eachbay leaf
  11. 1salt and pepper
  12. 1 cupAcini de pepe Pasta
  13. 1warm water to cover
  14. 1 tbspchopped parsley
  15. 1 tbspolive oil, extra virgin

Cooking Instructions

  1. 1

    Sweat veg.(except spinach) In olive oil for 5 min. Add salt and pepper, garlic, italian seasoning, and bayleaf.

    Add ground turkey to brown. Break up. Add onion soup mix and parsley.

  3. 3

    Add quart of chicken broth and spinach.

  4. 4

    Add water to cover. Bring to boil and reduce heat to simmer for 30 minutes.

    Add pasta. Simmer for 10 more minutes, and enjoy. I use 6 qt pot to make soup
