Fresh herbs (such as mint, cilantro, and lettuce)
Fish sauce

Rinse the beef, pat dry, and slice thinly.

Marinate the beef with the sauce from cookpad.com/vn/cong-thuc/4688497-cach-lam-nước-sốt-ướp-bo-nướng.

Arrange the beef slices on a grill rack over charcoal and grill until just cooked for best flavor.

Mix the dipping sauce using 2 parts fish sauce, 2 parts sugar, 4 parts water, and 1 part lime juice. Add minced garlic and chili. Prepare scallion oil and brush it over the banh hoi noodles.
