  • 1Eat corn
  • 1Poblano Pepper, remove seeds and ribs
  • 1 tspGarlic powder
  • 1Shallot, minced
  • 1 cupGrape tomatoes, halved
  • 1 canBlack beans, rinsed, drained
  • 1 1/2 tspOlive oil
  • 1 tbspRed Wine Vinegar
  • 2 tbspCilantro, minced
  • 2 tbspCrumbled feta
  • 1Salt and pepper

Steps

  1. 1

    Set oven to broil. Broil corn and poblano pepper skin side up for 8-10 minutes. Cut corn off the Cobb and peel skin from charred pepper. Dice pepper.

    Mix all in gradients together and serve.
