heat skillet on med. high heat, add olive oil
- 2
chop ham and mushroom. combine in skillet. finely chop chives and set aside.

season with salt and pepper and some garlic powder or finely chopped garlic clove

cook until sizzling stops. remove from heat.

on medium to high heat. crack 4 eggs into medium pot.

use a thicker spatula and start to stir eggs. do not season and do not stop stirring.

cook for approx. 1 minute on heat and remove from heat. continue stirring for approx. 1 minute and back on heat. repeat process 2 to three times.

you should see the eggs start to setup. remove from heat and stir. add 1/4 cup of cream. this will stop the cooking process

place bread in toaster. then place on plates
- 10
season eggs with salt, pepper and add those chopped chives. stir and pour over toast.

spoon mushroom and ham over eggs and serve
