Ingredients

  • 1 cupButter
  • 3/4 cupFlour
  • 1/2Chopped Yellow Onion
  • 1 cupChopped Celery
  • 1 cupChopped green pepper
  • 2 cloveGarlic minced
  • 1 cupSliced okra
  • 3 cupShrimp stock
  • 2 cupBottle clam juice
  • 1 cupChopped canned tomatoes with juice
  • 3Bay leaves
  • 1 tbspParsley flakes
  • 1 tbspCajun seasoning
  • 1 tspThyme
  • 1 tspBasil
  • 1/2 tspGround black pepper
  • 1 1/2 cupSmoked cooked sausage
  • 2 lbPeeled shrimp

Steps

  1. 1

    Cooked white rice in large heavy saucepan, over low heat, melt 1 cup butter

  2. 2

    Add the flour, and cook on low heat until the roux is dark brown (30-45 minutes stirring constantly)

  3. 3

    Add onion, celery, peppers and garlic. Sauté until it's translucent

  4. 4

    Mix in okra and remaining ingredients including 1 tbls of additional butter.

  5. 5

    Simmer over med-low heat until thick, about 1 hour

  6. 6

    Remove bay leaves, and serve
