Ingredients

1 hour
  • 1 cuparborio rice
  • 1 largesweet onion
  • 1 packagesshitake mushrooms
  • 1bell pepper, any color
  • 2 cloveminced garlic
  • 1 cupwhite wine, or sherry
  • 3 cupchicken broth
  • 1 1/2 tspcracked pepper
  • 1/4 cupolive oil
  • 2 tspdried thyme

    Dice onion, set aside

  2. 2

    Dice bell pepper, set aside

  3. 3

    Slice mushrooms, set aside

  4. 4

    Add oil to pot. Heat oil over medium.

  5. 5

    Saute onions 3 minutes

  6. 6

    Add garlic and bell pepper. Saute 2 minutes

  7. 7

    Add mushrooms. Saute 2 minutes

  8. 8

    Add rice. Brown 2 minutes

  9. 9

    Add thyme and 1 cup broth

  10. 10

    Cook until liquid almost absorbed. Add another 1 cup broth

  11. 11

    Stir frequently until liquid almost absorbed. Add wine

  12. 12

    Stir frequently until liquid almost absorbed. Add last cup broth.

  13. 13

    Rice finished when all liquid absorbed.
