That famous statement" if only I had an oven, I would bake a,b,c". This used to be me until I discovered that nothing under the sun is impossible, you just need to put your heart to it. I decided to start baking using stove and charcoal jikos, the outcomes were great. No more "I wish I had an oven statements".
Here is a simple recipe for mini buns using charcoal jiko.

Steps

1r 40mins
  1. 1

Combine all the dry ingredients(Flour, salt, sugar, yeast). I used the normal cup for measuring to cater for those who don't have the weighing scale nor the measuring cups.

  2. 2

Pour the 2 tablespoon oil and mix with hands.

  3. 3

Make a well and add the luke warm water bit by bit just like when making chapati.

  4. 4

Knead thoroughly, don't be in a hurry.(I kneaded for 5 mins)

  5. 5

    Cover and let it rest.
    It should double in size.(45mins-1hr).

  6. 6

When it doubles in size, knead again and divide into balls.

  7. 7

Roll the balls into rod like shapes.

  8. 8

Take a lid(The ones we use to cover sufuria.) and apply margarine, sprinkle a little flour then place the log shaped dough.
Space them out to give room for rising/ expanding

  9. 9

Brush with eggwash and give it time to rise as you light your jiko.

  10. 10

Take a bigger sufuria and put mawe/pebbles(I used a metallic bowl), followed by the lid containing the buns. Cover with a bigger lid.

  11. 11

When the jiko is lit, put the charcoal on top of the lid as shown

  12. 12

How it looks like 20 mins into baking. I let it bake for 5 more mins to achieve a nice golden colour.

  13. 13

Voilà. Our buns are ready. Serve with tea or your favourite soup.
