Steps

Clean and peel the potatoes and cube them.

Place in a sufuria and cover with water and add tumeric, cayenne pepper and salt and bring to a boil.

Boil until a fork goes through easily.

Heat the oil in a big saucepan until hot. test with a piece of potato.

Separate the overcooked potatoes to use for the croquettes.

Deep fry the remaining potatoes until crunchy then drain in a kitchen towel. mould the overcookef potatoes into balls and dip in the egg white then cover with bread crumbs.

Deep fry the balls until golden brown. drain in a kitchen towel.

Serve the potato cubes and croquettes with the desired meat or eggs and kachumbari.
