Ingredients

  1. 2 cupspasta or macaroni
  2. 1/2 tspcumin (or jeera)
  3. 2-3garlic cloves chopped finely
  4. 1large onion chopped finely
  5. 2carrots chopped
  6. 1/4 -1/2 cupgreen peas
  7. 1/4 cupchopped capsicum or bell pepper
  8. 3/4-1 cupchopped tomatoes mashed or pureed (do not use very so
  9. to tasteSalt
  10. 1/2 tspred chilli powder
  11. 1/2 tspGaram masala or pav bhaji masala or any other masala powder
  12. 1/2 tspkasoori methi
  13. Cream as needed (optional)
  14. 2 tsp Olive oil

Steps

  1. 1

    In a large pot, bring 6 cups of water to a boil. Add salt and pasta macaroni. 
    Cook till al dente. I suggest referring the instructions on the pack.
    Drain off to a colander and rinse in cold water. Set aside.
    Making masala pasta

  2. 2

    Heat half of the oil mentioned in a pan. 
    Add cumin.  When they begin to splutter, add garlic. 
    Fry till it begins to smell good.
    Add onions and fry until they turn pink.

  3. 3

    Add chopped veggies and fry for about 2 minutes.
    Next mash the tomatoes well and add it to the pan along with salt.

  4. 4

    Cook until the tomatoes turn soft and blend well with veggies. The raw smell of tomatoes should disappear.
    cream add now and stir.
    Add cooked pasta and the left over oil. Toss well. Adjust salt as needed. Add coriander leaves.
    Serve masala pasta hot.
