This is my all time favorite soup from Olive Garden, but these days, I prefer to make my own version of it at home. Not only can I control the ingredients and tweak it to my liking, but I also get a whole pot to enjoy.

Ingredients

8 servings
  1. 3 tbsp.unsalted butter
  2. 1 tbsp.olive oil
  3. 1/2yellow onion, finely diced
  4. 1 stalkcelery, diced
  5. 2carrots, peeled and diced
  6. 4 clovesgarlic, minced
  7. 3 tbsp.all purpose flour
  8. 4 cupsunsalted chicken broth
  9. 1 cupheavy cream
  10. 1/2 tsp.each salt and pepper
  11. 1/4 tsp.each poultry seasoning, salt free all purpose seasoning
  12. 1/8 tsp.ground nutmeg
  13. 2 cupscooked, shredded chicken
  14. 1 package (16 oz.)potato gnocchi
  15. 3heaping cups roughly chopped spinach
  16. Fresh parmesan cheese, for serving

Cooking Instructions

    Heat the butter and oil in a large pot or dutch oven over medium heat. Once the butter has melted, add the onion, carrot and celery with a pinch of salt. Cook, stirring often, until they have softened up. Add the garlic and cook a minute or so more, until fragrant. Then stir in the flour and cook for an additional minute or two.

    Increase the heat to med-high. Stir in the broth, about a cup at a time, making sure the flour and onion mixture blends in smoothly and theres no lumps. Then stir in the cream, seasonings and chicken. Let the soup come up to a low boil.

    Once it starts to boil, stir in the gnocchi and cook until they are tender...this will only take 3-5 minutes. Once the gnocchi are done, remove the pot from the heat and immediately stir in the spinach. Taste the soup and add any additional seasonings you think it needs, then it's ready to serve.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
