Season the oxtail with salt and pepper. Sprinkle flour and toss to coat

In two batches cook the oxtail in hot oil in a pot over medium heat until well browned

Add onions,carrots,garlic,bay leaves and rosemary and cook until onions are soft.pour in the stock and paste. Mix well. Cover with a lid and simmer for 2hours

Add mushrooms and cook for another 15minutes
