Take curd and tie it in thin clean cloth for 2 hours to drain water.

Remove curd from cloth after 2 hours and transfer to a bowl. Add castor sugar and mix well.

Crush tender #coconut in Mixi jar into a soft paste.Add it to the hung curd and mix well.

Chop dry fruits into small thin pieces and keep aside.

Divide hung curd in 3 equal parts. Add shahi gulab to 1 part and mix well so you get nice pink colour.

Add cardamom to the rest of the 2 parts, mix well and keep aside.

Take a serving bowl, make the first layer of white curd, top it with the pink layer and finally cover with the white layer.

Garnish with chopped dry fruits and saffron strands.

Now keep it in the fridge and allow it to cool. A refreshing #coconutshrikhand is ready to serve!
