Brekky Eggs 4-1

Cooking Instructions

Preheat oven to 180*C.

Fry bacon and onion until onion is soft and throw in a bowl with tomato, parsley and cheese. Mix and set aside. !

Grab a single serve ceramican, crack a couple of eggs, splash of milk and some seasoning.

Whisk with a fork until milk and eggs are one.

Sprinkle over your bacon mix and bake for around 8 to 10 minutes until eggs have risen and golden brown on top. You can use a a skewer to test if you need to, stab eggs and if it comes out clean- you are ready to mung down.

Serve with some pork snags and toast. Very easy, yum! Enjoy

Eggs Bennydict Eggs Bennydict
There’s a song by MC Chris which starts with the words, “Rhyme renegade” that my wife thinks starts by saying, “Eggs benedict”. Anyway. This is a nice 10 minute breakfast/brunch, and an absolute classic. As I had a big pack of crumpets, I used these instead of a muffin. I figure that’s enough to justify naming it after myself.
