A delicious forest cake I made for a friend's birthday
Cooking Instructions

Pre-heat oven to 180 degrees

Grease the baking tin and dust with flour
- 3
Separate the eggs, leaving the whites in a bowl and the yolks in a cup
- 4
Whisk the egg whites until fluffy and soft peaks form
- 5
Add the yolks and continue whisking until well mixed
- 6
Add the sugar and continue whisking
- 7
Add flour, baking powder and fold in the mixture
- 8
Pour into prepared baking tin and bake at 180 degrees for 40 minutes

Let it cool then ice it

Using a serrate knife, cut the cake into three equal parts

Brush with rum syrup making sure all slices are moist
- 12
Place bottom slice on board, apply 1/3 of the cream and half of the cut strawberries
- 13
Place next slice, apply 1/3 of the cream and the remaining strawberries
- 14
Cover the cake with remaining cream and shave chocolate on the cake
- 15
Garnish the top with selected strawberries cut in half
