Serves 3-4 servings

4medium potatoes
1large onion
4eggs
olive oil
Salt

Steps

Peel the potatoes and onion, then add them to a skillet with plenty of olive oil. Add salt and fry over medium heat until the potatoes are cooked through.

Beat the eggs with a little salt.

Drain the oil from the potatoes and add the beaten eggs.

Let the eggs set, moving the skillet so it doesn’t stick and browns evenly. Flip the omelette with the help of a plate or tortilla lid and brown the other side.
