For topping and caramel sauce:

In a heavy bottomed non stick saucepan, dissolve the brown sugar and water

As the syrup thicken add the butter and mix well until thick

Take off heat and add the caramel sauce in a greased cake tin
- 5
Add the chopped jackfruit pieces by evenly layering them over the caramel sauce

Cake batter:

Combine all the dry ingredients, except butter in a bowl and mix

In another bowl, beat the eggs well
- 9
Add the vanilla and milk. whisk well until well combined
- 10
Add the butter and whisk well

Add the wet batter into the dry ingredients by making a depression in the center and fold in well

Add the cake batter on TOP of the caramel-jackfruit layer and evenly spread it

Bake in a pre heated oven for 30-40 minutes on until done at 190 degree celcius

Cool off completely and then turn and demould the cake

Enjoy a slice topped with vanilla ice cream
