Steps

Take all the spices and mix together in a bowl. Then rub all over the pork roast.

Add olive oil to a skillet on med heat. Brown the pork roast on all sides .

Put pork roast in a roasting pan and add carrots, onion, celery, and garlic, cooking wine and water. Enough water to cover 2/3 of the pork roast.

Cover with foil and cook in oven on 250°F and cook all day. You could also cook in a crock pot on low all day.
