This is a simple and traditional recipe of 'Egg Rabri' taught by my mom which tastes almost like the famous Indian dessert 'Rabri'.
Steps

Take 1litre of milk and boil till it reduces half.

Take 3 eggs and separate the egg yolks from the white and keep aside.

As soon as the milk reduces to half it's consistency,add kesar.Kasar will give the milk a nice yellow colour and a good aroma.

Add sugar and keep stirring till the sugar get completely dissolved in the milk.Keep stirring and boil the milk till it aquires a thick consistency.

Take the egg whites in a separate bowl,add vanilla essence into it to omit the smell of egg whites and beat well.

With the help of a spoon start taking the white froth carefully from above and gradually add into the the boiling milk.The gas should be on low flame.

Repeat this process till the entire egg white gets finished.Keep stirring.

The egg white froth will start taking shapes like dumplings in the milk.Keep stirring and cook well for 5 minutes.

After 5 minutes add chopped pistachios and again stir well.

Now add cardamom powder and turn off the flames.

Serve chilled.
