Part boil the scollopped potatoes first just a minute in boiling as they do take longer to roast

In a tray place foil and spray oil all over

Add the veg to the tray then add the potatoes

Add the salt,pepper and Basil and spray all over with the oil

Place in a preheated oven for 10 minutrs then take out and mix them around then back in the oven until they are done another 10 - 15 minutes.180 or gas 7

All turned over

Cook for 5 - 10 minutes

Serve hot on a serving dish
