
Spinach and corn quesadillas

Mix all the ingredients properly and season it well. Take tortillas, sprinkle 2 tbsp cheese on half of the tortilla, leave the other side of the tortilla without the cheese. Add filling over the cheese, again sprinkle some cheese over the filling, also put cheese nicely on the edges of the tortilla.

Pick up the empty side of the tortilla and fold, to get a semi-circle, press well on the edges to seal the tortilla.

Heat 1-2 tbsp oil/butter in a pan, fry the quesadillas, till crisp and golden on both sides, cut it into triangles or any desired shape with a pizza-cutter, serve with salsa.
