Boil the spinach until it's soft and grate the cheese.

Whisk 4 eggs into a bowl and add the mushrooms, salt and pepper.

When the spinach is soft, but not quite done, add it to the egg mixture.

Add the grated cheese and mix.

Oil a deep muffin tray and pour the mixture in. Cook at 175°C for 30 minutes (or until golden on the top). Enjoy!
