Tehari or single pot vegetable rice recipe

Boil the mealmaker with salt and 1/2 teaspoon of ginger garlic paste and a cinnamon stick

Squeeze the excess water out of the mealmaker chunks once they are boiled

Drain and spread the rice evenly on a flat pan so that it's dried well

Marinate the soaked and dried rice for half hour with the spice powders and salt
- 5
Heat some white oil in a pan.

Shallow fry all the veggies with salt for 10 mins and keep then aside

Now in the same pot, add some more oil if needed

Break and add the dried red chillies, cumin seeds and the whole garam masala

Once they start to crackle, add the sliced onions

Fry then until they r translucent.

Add the diced tomatoes and the ginger-garlic paste

Saute for 5 mins or til lthe oilstarts separating out

Add the mealmaker chunks and fried veggies and coat the masala well

Cook for 5 mins. Sprinkle some water if needed

Add the marinated rice and fry it well with the contents of the pot until the rice becomes fragrant

Add the green chillies

Add 4 cups of water (measured in the same cup as rice) and cover it. Let it cook.

When the rice is 70% done, add beaten yoghurt. Mix well taking care that the grains don't break

Close the lid and let it to cook till the rice is cooked perfectly.

Once the rice and the veggies are cooked, add the garam masala powder and ghee from the top and mix carefully

Serve hot
