Ingredients

5 servings
  1. 3 cupsbasmati rice
  2. 5tomatoes
  3. 2extra large bell peppers
  4. 1large onion another half chopped
  5. 5long peppers
  6. 3small peppers
  7. Vegetable oil
  8. Fried or grilled chicken
  9. Fried plantain
  10. cubesKnorr
  11. Salt, thyme, curry
  12. Chicken stock

Steps

  1. 1

    Blend together all the vegetables except half onion.

  2. 2

    In a pot, pour in 2 cooking spoons of vegetable oil. When it's hot, pour in chopped onions and fry till opaque.

  3. 3

    Pour in the blended tomatoes and pepper. Season and leave to cook till dry.

  4. 4

    Pour in your chicken stock(plain water is fine too), check for taste and bring to boil. Ensure your liquid is not too much. I start with about 3 cups of liquid and add a little at a time as needed.

  5. 5

    When rice is almost cooked and there's no liquid left, turn down heat and cover the pot. I do this to prevent the rice from being soggy.

  6. 6

    Basmati does not benefit from jollof burn. Serve
