Ingredients

  • 1 kgChicken drumsticks or cut into medium pieces
  • 2 tbspGinger-garlic paste
  • 2Green chilli finely chopped
  • 4 tspRed chilli powder
  • 1/2 tspTurmeric powder
  • 1 tspCumin powder
  • 2 tspGaram masala powder
  • 3 tbspPlain flour
  • 1 tspCorn flour
  • 1 tspRice powder
  • 2 tbspLemon juice
  • 1 sprigCurry leaves , finely chopped
  • 1 tspVinegar
  • To tasteSalt
  • As neededOil
  • Red food colour – Few drops (optional)

Steps

    Wash and clean the drumsticks. Make random slits on the pieces and allow it to drain any excess water. In a large bowl, mix together all the ingredients except for the rice flour. Marinate the drumsticks with the prepared marinade and leave it aside for at least 5 hours or overnight in the refrigerator. Heat oil in a heavy bottomed pan. Just before frying, add rice flour to the marinated chicken and mix well. Once the oil is hot, reduce the flame and bring it to medium flame.

    Carefully drop the chicken pieces into the hot oil. Cook until the chicken is done on both sides, carefully flipping occasionally. Fry all the chicken pieces in 2 or 3 batches making sure not to overcrowd the pan. Drain the fried drumsticks on a paper towel. Serve hot as a yummy starter.
