Sauté the onions

Add tomatoes capsicum garlic and let them simmer till they form a thick sauce

Add the plantain and mix them up. Cover them up and let them simmer. Keep mixing in intervals and they start sticking to the pan add water and then let them cook in low heat

When they become soft and easy to break in two, they are ready. Add chopped coriander and cover them and ensue the coriander looks crooked

Serve with rice and garnish with tomatoes and cucumber or any other garnish ofyour choice
