White Fruit Cake

Soak the mix fruits with juice two day before using or parboil immediately before using.

If you're parboiling the mixed fruits, add the diced dates and steam for 20minutes.

Drop from heat, sieve and set aside

Add the baking powder to the 2cups flour and set aside.

Cream sugar and magarine or butter until fluffy

Break the eggs inside a bowl, whisk the eggs for about 3 minutes.

Add the egg mixture to the beaten sugar mixture. Mix thoroughly

Add the flour and mix to get a thick batter.

Add the fruits and mix to combine

Add the 1 tablespoon vanilla flavour

Bake in a preheated oven for 1hr 10minutes, depending on your oven type.

Your fruit cake batter is suppose to be very thick.
