Sauté the chicken pieces in olive oil, then add the onions, tomatoes, cilantro, and parsley. Season the mixture with spices, black pepper, and salt, then add hot water. Let the mixture cook on the stove for half an hour.

Gradually add the vegetables, starting with those that take longer to cook, followed by the quicker-cooking ones. Let them cook until done.

To prepare the couscous, place it in a dish, add the clarified butter and salt, and mix by hand. Add a little water and mix well.

Place the couscous in a couscous pot over the stove and leave it for 15 minutes. Remove the pot from the heat, sprinkle the couscous with water, and mix. Return it to the pot for another 15 minutes. The couscous is now ready.

To serve, place the couscous on a plate and top it with the vegetables and chicken.
