Red Lentil and Vegetable Soup

Rinse the lentils and drain.

In a pot over medium heat, heat the olive oil, then add the lentils and stir until they lighten in color.

Slice the onions into rings and add them to the lentils. Peel the garlic and add it as well. Continue stirring over medium heat.

Wash the remaining vegetables well and cut them into medium-sized pieces or as desired. Add them to the lentils. Pour in enough boiling water to cover the ingredients, cover the pot, and cook until the vegetables are tender, stirring occasionally.

Remove from heat and let cool slightly. Transfer the mixture to a blender and blend until smooth. You can add a little more boiling water to help blend the ingredients if needed.

Return the soup to the pot after blending. Add the spices and salt, and simmer for just 10 minutes before serving.
