A different twist on plain old chicken noodle soup! I like this and played with what I had on hand. I hate cutting matchsticks so I shredded my carrots. Only had regular bok choy so trimmed down the head I had and cooked a little longer.

Ingredients

6 servings
  • 6 creduced-sodium chicken broth
  • 2scallions, sliced on diagonal
  • 1 (1 inch)piece fresh ginger, peeled and minced
  • 1 Treduced-sodium soy sauce
  • 6baby bok choy, halved
  • 1 cmatchstick-cut carrots
  • 2 ccooked whole wheat capellini
  • 6 ozlean cooked pork, cut into matchsticks
  • 1 clightly packed baby spinach

Steps

  1. 1

    Combine broth, scallions, ginger and soy sauce in large pot and bring to boil. Reduce heat and simmer until scallions are tender.

  2. 2

    Add bok choy and carrots and simmer until barely tender.

  3. 3

    Stir in pasta, pork and spinach. Simmer until spinach is just wilted.
