Ingredients

  • 2 cupsdry mixed beans (soaked overnight, then boiled until tend
  • 2 cupsfresh maize/corn kernels (boiled until tender)
  • 2 tbspoil
  • 1onion, chopped finely
  • 2tomatoes, chopped
  • to tastesalt
  • 1 tbsp.tomato paste
  • Garlic paste
  • Chopped chillis

Steps

  1. 1

    Give the pre-soaked beans a rinse and put them into a pan or pressure cooker.

  2. 2

    Add the maize (if you are using from a can you will not need to boil the corn).

  3. 3

    Add enough water to cover everything and sprinkle some salt.

  4. 4

    Boil or pressure cook them until tender (takes about 12 minutes in a pressure cooker)

  5. 5

    Drain but reserve the water they were cooked in as it contains a lot of flavour/nutrients and you can use this in place of plain water when cooking the githeri later.

  6. 6

    Heat the oil in a pan, add the chopped onions and fry until transluscent (but not brown).

  7. 7

    Add the garlic paste and tomato paste followed by the chopped tomatoes.

  8. 8

    Cook on low heat until the tomatoes are mushy, stirring regularly and breaking up the tomato pieces with your spoon as you stir

  9. 9

    If the mixture begins to stick to the bottom of the pan, add some of the water leftover from cooking the beans, a little bit at a time

  10. 10

    Then add the chopped chillis.

    Add your githeri

    Allow the githeri to gently simmer on low heat, giving an occasional stir until the mixture thickens and the flavours are well combined

  13. 13

    Serve with avocado
