Pav Bhaji (instant pot or cooker) recipe
Bhaji means curry and Pav is like a burger or dinner roll kind of bread. In this recipe i did not use Pav Bhaji masala that can be bought in stores generally as i did not have at hand and used the masala powders that are available in the kitchen, it turned out really delicious so wanted to share the recipe i followed. However, you can replace all the masala powder and add the Pav Bhaji masala instead if you have it ready.

Chop 1 1/2 Onion and the remaining half onion keep aside to be used later while serving.

Also chop all the veggies, ginger and garlic

Take pressure cooker in which you can directly sauté te and pressure cook later, if you do not have or use a pressure cooker cook check Notes1

Heat 1/2 stick butter i.e.;1/4 cup add Onions, garlic, ginger
- 5
Let the Onions fry a little and then add peppers and tomatoes
- 6
After 3-5mins add all the masala powders, salt and mix it well, cook this for 2 mins before adding vegetables

Add all the vegetables and pour 1/2 cup water

Pressure cook in Instant pot about 8 minutes with high pressure setting and releaase pressure after 12-15 minutes and again put in sauté mode

For stovetop pressure cooker cook for 3 whistles and once pressure get down open.

Now check for taste add salt or amchur powder if you like it more tangy, but we generally serve with lime and is added before eating so keep that in mind

Now mash the curry with hand grinder or potatoe masher and let it simmer for a while and garnish with finely chopped coriander leaves.

Heat tawa or a flat pan and toast the pav to light brown with butter, serve immediately with the bhaji, lime piece and finely chopped onions (the half onion in the first step is used here)

You can put a little butter on the gravy while serving too, though its optional

Notes1 : if not using pressure cooker of any kind then cook the vegetables seperately and add them after step 6 and continue to step 10

Notes2: You can also add to use ginger garlic paste instead of chopped ginger n garlic

Notes3 ; While mashing with hand grinder remember not to make it into to too much of a paste l, coarse grind gives good look and taste. I used a potato masher this time and i liked it better than doing with grinder.
