Ingredients

  • 200 gmboneless chicken – boiled with a little salt, and shredded
  • 3 cupsCooked rice – can use leftover rice also)
  • 3 tbspvegetable oil
  • 1 tbsp finely chopped garlic
  • 1 tspfinely chopped ginger (optional),
  • 1small onion sliced
  • 1green chilli finely chopped
  • 4-5spring onions onion and stalks chopped separately
  • 1carrot small pieces
  • 15French beans
  • 3Eggs
  • to tasteSalt
  • 2 tspSoya Sauce
  • 1/2 tspPepper Powder

Steps

  1. 1

    Heat 2 tbsp oil in a deep pan/ wok, add chopped garlic, ginger (optional), stir for a minute or two. Don't burn the garlic.

    Add chopped onions, green chilli, spring onions (white part), carrots, beans and stir fry on high heat for 2-3 minutes, till the vegetables are just about tender and crispy.

    Move the contents of the pan to a side. Add 1 tbsp oil in centre of the pan. Beat the eggs with a little salt, and pour into the wok and scramble them.

  4. 4

    Add cooked rice, boiled and shredded chicken, salt and pepper as per taste, and a dash of soya sauce. Mix well and Stir fry for another 3 minutes or so. Check the seasonings.

  5. 5

    Remove in a bowl, Garnish with spring onions and serve hot.
