You'll love the flavor of yuca (cassava) mixed with zucchini, seasonings, and cheese! These patties are not only delicious but also very easy to make, and they're another great way to enjoy yuca.

Remove the tough central fiber from the yuca and, while it's still hot, mash it well. Add the grated zucchini and mix everything together.

Sauté the chopped seasonings in a little oil with a touch of garlic, oregano, and salt. Mix and add to the yuca and zucchini, stirring everything together. Add the beaten egg and finally the cheese, mixing very well.

Take some of the mixture, form balls, and flatten them into patties—not too thick or too thin. You can coat them lightly with flour on both sides before cooking if you like.

Lightly oil a nonstick skillet and heat it. Place the patties in the skillet and brown them on both sides. They're ready to enjoy!

Once they're done, you can sprinkle more shredded cheese on top and let it melt.
