Ingredients

  • 4potatoes, boiled and cubed 2 tbsp vegetable oil 1 tsp cumin seeds 1 tsp coriander seeds 1 tsp fennel seeds
  • 1/4 tspturmeric powder salt to taste 1 tsp mango powder (amchoor powder) Chopped coriander leaves Fresh bay (tamalpatra leaves) 3 tablespoon achaar masala

Steps

  1. 1

    Boil the potatoes gently with the skin on for about 10 minutes. Once cooled peel and cut them into 4cm cubes and set to one side.

    Heat oil and add cumin, coriander and fennel seeds once sizzling and fragrant, stir in the
    boiled and cubed potatoes.

    Add the achaar masala and salt if required
    Mix well so that it is well coated with the seasoning.

    Cook on a gentle heat for 2 or 3 minutes - you don't want them to turn into mash.
    Add the amchoor powder and garnish with coriander leaves and bay leaves.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
