Cook the pasta per the package instructions and drain

In a pan, heat the oil. Saute the chopped onions and minced garlic

Once they start browning, add the chopped tomatoes. Allow the tomatoes to cook, and the water content to decrease.

Add in the tomato paste, oregano and basil. Let cook on medium stirring frequently for about 10-15 mins.

In a bowl or other container, serve 1 bowl of pasta. Top with this sauce.

Now heat up oil and saute the carrots and peppers. Carrots need longer to cook, so add them in first, saute for 10 mins then add in the pepper. Saute until all vegetables are tender and cooked.

Spread these vegetables on top of the pasta and sauce from step 5. Mix well.

The sauce and vegetables can be mixed without the pasta and stored in the fridge for a few days. When ready, just cook pasta per package directions and mix in the vegetable/sauce mix.
