Peel and wash the potatoes and onion. Slice the potatoes and chop the onion. Fry them in plenty of oil.

While the potatoes are frying, beat the eggs.

When the potatoes are golden, drain them and add them to the beaten eggs. Add salt to taste and mix well.

Heat a tablespoon of oil in a skillet (you can use the same oil from frying the potatoes) and pour in the potato and egg mixture. Lower the heat and let it set and brown.

When the omelette is mostly set, flip it with the help of a plate and cook until it reaches your desired doneness.
