Jambalaya with Andouille Sausage, Grilled Chicken and Shrimp

Cooking Instructions

I grill 3 chicken breast with butter, salt, pepper, and garlic salt, let cool and cube or put in pot on stove with water and cook 20 minutes. Cool and cube up.

In a large pot turn heat to medium high and sauté' in olive oil, onion, garlic, celery, bell pepper 2 to 3 minutes.

Add chicken broth, cubed chicken, sliced andouille sausage and shrimp. Stir in all seasonings. You may need to add a little more chicken broth, will cook down. Cook on medium and sir occasionally for 1 hour. We put it on rice!!

This recipe is taken with liberties from Paul Prudhomme. If you don't plan on laboring with shrimp shells to make a seafood stock, there are several seafood concentrate pastes on the market. I use the one from penzeys. Make sure you follow the directions for reconstitution exactly. I've found from experience that using double strength stock makes an unpalatably salty and fishy jambalaya. Of course you can also just use chicken stock if you can't find seafood.

I thought it might be nice to come up with a tasty recipe using chorizo.The consistency of this dish will change depending on the size of the tomato you use. If the rice still seems hard after cooking, keep the lid on the pot, turn of the heat, and leave to steam for 10 minutes.
