Ingredients

10 servings
  1. 3chicken breast, skinless, boneless (I grill with butter, salt, pepper)
  2. 1 lbandouille sausage links, sliced
  3. 1 lbextra large shrimp (20-30 count)
  4. 1large diced onion
  5. 3-4garlic cloves
  6. 1bell pepper finely chopped (red, yellow, (gives it color) or green
  7. 2 stalkscelery, finely chopped
  8. 3-4 cupschicken broth
  9. 1/2 tspdried thyme
  10. 1/2 tspdried oregano
  11. 1/2 tspground marjoram
  12. 1 tbspCajun seansoning
  13. 1/2 tspcayenne pepper (for the kick I do 1 tsp)
  14. 1/2 tspsalt
  15. 1/2 tsppepper
  16. 1 tspsmoked paprika
  17. Olive oil

Cooking Instructions

    I grill 3 chicken breast with butter, salt, pepper, and garlic salt, let cool and cube or put in pot on stove with water and cook 20 minutes. Cool and cube up.

    In a large pot turn heat to medium high and sauté' in olive oil, onion, garlic, celery, bell pepper 2 to 3 minutes.

    Add chicken broth, cubed chicken, sliced andouille sausage and shrimp. Stir in all seasonings. You may need to add a little more chicken broth, will cook down. Cook on medium and sir occasionally for 1 hour. We put it on rice!!
