Eid Cookies (Ka'ak el Eid)

Sift the flour, ka'ak spice, and salt together.

In a large wide bowl, add the flour and sprinkle the sesame seeds over it.

Heat the clarified butter or ghee until very hot, then immediately pour it over the flour. Stir with a ladle until it cools down a bit, then rub the mixture well with your hands until fully combined.

In a separate bowl, mix the yeast with the sugar and mash together until it becomes liquid. Add the warm water, then pour this mixture into the flour mixture. Knead well until you get a somewhat firm dough. Cover and let it rise.

Cut and shape the dough into cookies.

Place the shaped cookies on baking sheets and let them rise again. Bake until golden, then let cool and dust with powdered sugar.
