Ingredients

  1. Ingredients for the dough
  2. 2 cupmaida/all purpose flour
  3. 1 tspajwain/ carrom seeds
  4. to tasteSalt
  5. 1/2 tspsugar
  6. as neededghee melted
  7. as neededWater
  8. Ingredients for stuffing masala
  9. 1 tbspoil
  10. 1 tspcumin seeds
  11. 2-3potatoes peeled and fried
  12. 1/4 cuppeas
  13. 1/2 tspred chilli powder
  14. 1/2 tspamchur
  15. 1/2 tspgaram masala
  16. to tasteSalt
  17. 3-4cashews roasted and chopped
  18. 3-4raisins
  19. 1 tsproasted and crushed coriander seeds
  20. as neededCoriander leaves chopped
  21. as neededOil for deep frying

Steps

20 minutes
  1. 1

    FOR THE DOUGH.In a large mixing bowl take maida,ajwain, salt,sugar and melted ghee.Now add water to knead into a stiff dough.cover and rest for 15-20mins

    FOR THE STUFFING
    Heat the oil and add cumin seeds.mash the potatoes with ur hand and add to tempering

  3. 3

    Now add all the spices and add peas,Cashews,raisins and add the roasted crushed coriander seeds mix well
    Finally add coriander leaves mix well

  4. 4

    SHAPE,STUFFING THE SAMOSA
    Roll our a portion of the dough in oval shape.Now cut it horizontally,diving into 2 equal portion using a knife

  5. 5

    Grease with water and make cone.stuff masala into the cone

  6. 6

    Pull back and fold the cone.seal tightly by pressing firmly

  7. 7

    Heat the oil in a Kadhai and deep fry the samosas on a medium flame.Finally serve hot with aloo sabji,green chutney and sauce
